Quick and Yummy Pumpkin Bread!

I am not much of a cook, but lately I discovered that making bread is really quite easy...and hey I am putting the Kitchenaid mixer hubby got my for my birthday to good use!
My favorite bread so far was the first I made and that is a quick and easy Pumpkin bread. I am not even a fan of pumpkin flavored things, but this was so good I did not even want to give a piece away. My six year old son thought it was heavenly.

The ingredients:
 1.5 cups of sugar
1/2 cup vegetable oil
2 eggs- beaten
8oz can of unsweetened pumpkin
1 5/8 cup of self rising flour (or all purpose and add baking powder, soda and salt)
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp cinnamon
1/4 tsp ground cloves
 1/3 cup of water

Butter a loaf pan. Preheat oven to 350. Stir Sugar and Oil together, and stir in eggs and pumpkin. Slowly blend in the other dry ingredients and water into the wet mixture. Bake for approx 40 minutes or until the toothpick comes out clean. Let stand for 15 minutes. Remove from pan.

Napkins.com offers a cute little mini loaf liners that would be perfect with the recipe. You could make a bunch of mini pumpkin breads and take to your next Fall themed party or Thanksgiving feast!

I received a very small sample of the loaf liners for the mention of the site. No other compensation was given, and the recipe is one I thought my readers would appreciate! We certainly love it. If you have any questions feel free to contact Paige at nursemommypaige at yahoo dot com.

  2. This sounds wonderful, and I like recipes made with oil instead of butter. This is one I want to try soon!
