Lee Kum Kee Orange Chicken and Fried Rice

Fried rice and Lee Kum Kee Orange Chicken Recipe

Fried rice

Ingredients

  • 3 cups cooked rice
  • 2 tbs olive oil
  • 1 small white onion, chopped into small pieces
  • 1 cup frozen peas and carrots, thawed
  • 2-3 Tablespoons soy sauce (more or less to taste)
  • 2 eggs, lightly beaten
  • 2 Tbsp chopped green onions (optional)
  • chicken or shrimp (optional)

Instructions

  1. If using chicken chop into small pieces and cook in olive oil until done
  2. Preheat a large skillet or to medium heat and add olive oil.
  3. Add white onion and peas and carrots and fry until tender. If you want shrimp, you can cut up and add at this stage.
  4. push the onion, peas and carrots to the side, then pour the eggs onto the other side. Scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  5. Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

I have heard that if you cook the white rice a day before you want to make the fried rice that it tastes even better. I haven’t tried that yet, but I may. It saves a step of doing everything at once.
