Strawberry Rhubarb Cocktail Prairie Organic Spirits

It’s summertime (ish), so glad the weather is nicer. With summer comes drinks. Vodka and gin are great things to add to drinks to make them fresh and light. Prairie Organic Spirits makes well organic alcohol.




I received a bottle of the Gin and regular Vodka and thought of this amazing Strawberry Rhubarb syrup to add to it. I wouldn’t normally think of adding a thicker syrup (not think like jam) to a drink but it really really works. Adding the mineral water and the alcohol makes it really nice, light, fresh and perfect for the summer! To make matters even better, the Gin and Vodka are organic so you know the best is used to make it.



Strawberry Rhubarb Cocktail with Gin or Vodka

¼ cup (to taste) Strawberry/Rhubarb syrup
8oz Perrier/mineral water
1 oz Prairie Organic Gin/vodka
Slice of strawberry (inside glass)
Full strawberry for garnish

Syrup (makes about 1 ½ cups):

¾ cup Chopped Strawberries
Extra strawberries for garnish
¾ cup Sliced Rhubarb
1/8 cup Lemon Juice
1 cup Sugar
1/2 cup of Water



Directions:
  • Chop up the strawberries and rhubarb into small chunks
  • Add to a medium sized kettle/sauce pan with ½ cup water and bring to a boil
  • Once it’s boiling, put to medium heat for 10 minutes, stirring often.
  • You can then either blend (i used my Ninja cup), or strain all the liquid out and discard the rest. By blending you can use it all. Just makes it frothy if you blend.
  • Place back into the sauce pan, add lemon juice and sugar, and cook for 5 mins or until all the sugar is dissolved.
  • Pour syrup into a storage container (glass or mason jar) and cool in the fridge.
