Easy and Fast Peanut Butter and Chocolate Fudge

A couple of weeks ago, I was hanging out with one of my best friends and of course food came up (our favorite subject). She had just made fudge and forgot to bring it with. This of course made me crave it. So, like most women, I caved and made a batch. My favorite combination of food is, peanut butter and chocolate, so that’s what I made, Peanut Butter and Chocolate Fudge. To me, this fudge tastes a lot like, peanut butter cups.



Ingredients
4 tablespoons unsalted butter, plus more for brushing
1 can (14 ounces) sweetened condensed milk, divided ½ cup for peanut butter layer and ¾ cup for chocolate layer
3/4 cup packed light-brown sugar
Coarse salt
3/4 cup smooth peanut butter
2 1/4 cups confectioners' sugar, divided- 1 ½ for peanut butter layer and ¾ cup for chocolate layer
9 ounces (2 cups) bittersweet chocolate chips or chopped up.
Directions


1.   Brush a baking dish with butter. No size is wrong as it depends on what size you want the pieces. If you want “thicker pieces” I would choose an 8x8, but if you want “skinnier”, then a cake pan is good. After buttering the pan, line with parchment paper, leaving a 2-inch overhang on long sides. Brush parchment with butter as well.


2.     In a double boiler, If you don’t have one, you can use heatproof bowl and set over a pan of simmering water (that’s what I do) heat 1/2 cup condensed milk, 4 tablespoons butter, brown sugar, and a pinch of salt. Stir butter until it’s melted, then remove from heat. Mix in the peanut butter and 1 1/2 cup confectioners' sugar. Then, press peanut butter mixture into the bottom of prepared baking dish, smoothing top with an offset spatula.




3.     Melt chocolate (I use the same bowl that I used with the first step) in a double boiler or makeshift one, and stir until melted. Remove from heat and stir in remaining 3/4 cup condensed milk and a pinch of salt until all combined. Then mix in remaining 3/4 cup confectioners' sugar. Spread chocolate mixture over peanut butter layer, smoothing top with an offset spatula.
4.     Refrigerate until firm, about 2 hours.
5. Remove fudge from pan using parchment to lift, and transfer to a cutting board. Peel off parchment, and cut into pieces.




6. The most important step- ENJOY!
