Speck Alto Adige and Roasted Garlic Flatbread

Getting my kids to try new things can sometimes be difficult, but there are ways to make it easier. I recently made a flat bread with Speck Alto Adige PGI and Pecorino Romano. Since my kids didn’t know what Speck was, I simply just said, I’m making cheese pizza with special meat.





I’ll be honest, I have never used Speck Alto Adige PGI before and now that I have, I wish I did. It has an amazing flavor. For those that aren’t familiar with this meat, please check it out. Authentic Speck always comes from the Alto Adige region of Italy, hence the complete name Speck Alto Adige. It can be served diced, in strips or thinly sliced like prosciutto but either way its smoky and deliciously herby flavor are inimitable.



There are domestic imitations of Speck, but only ONE Speck Alto Adige PGI. These geographically protected Italian foods are made in a specific region, under strict guidelines, and with traditional methods that all play a huge role in the final flavor profile and characteristics of each one. This is what makes it so special and is nothing like anything I have had before. Go HERE to learn more about Speck Alto Adige PGI and the cheese I’m using Pecorino Romano PDO. When you buy your cheese, remember that the “romano” cheese you often see is not the same cheese as Pecorino Romano at all! Pecorino Romano is a centuries old sheep’s milk cheese made with strict production guidelines in Italy.


One of the things I love about creating a flatbread is that you can use almost anything for the toppings and mix and match for your taste. For my flatbread pizza, I took the “prosciutto” style.

There really isn’t a wrong answer even with how much or little ingredients you use. With that being said, this is how we made mine.



For the flatbread: You can do this a few ways, you can buy an already made flatbread, you can use a tortilla, or you can make your own. I make my own with my favorite simple no yeast recipe.

Then to construct the masterpiece I call the Speck Alto Adige and Roasted Garlic Flatbread.

Ingredients:

  • Speck Alto Adige PGI
  • Pecorino Romano PDO
  • Olive oil
  • Minced garlic
  • Garlic cloves
  • Fresh basil leaves



Directions:
  • Preheat oven to 425
  • Place your already prepared flatbread or raw dough if you are making from scratch.
  • Mix olive oil and minced garlic into a bowl (as much or little as you want) and spread onto the flatbread
  • Thinly slice the Speck Alto Adige PGI (I try to slice like prosciutto) and place on top of the garlic/olive oil base
  • Thinly slice or shred the Pecorino Romano PDO cheese and place as much or little as you want over the meat
  • Place raw garlic cloves next
  • Bake for 15-20 minutes or until the flatbread is light brown. You can do less time if the flatbread dough is already baked.
  • Once done garnish with fresh basil leaves and drizzle with a little bit of extra olive oil

  9. I have tried Speck Alto Adige PGI before and it was delicious. This looks so yummy and easy to make. I will have to get the ingredients i need to make this for lunch this weekend. I am sure it will be a big hit.
