Domino Sugar 4th of July Trifle

I can’t believe it’s July already. The year is already half over! How is that possible? Since it’s the 4th of July in a couple of days I wanted to do a dessert that was geared more towards the holiday. With the help of one of my favorite sugars (Domino Sugar), Fallon and I made a 4th of July Trifle.

Cheesecake Stuffed Chocolate Chip Cookies

With all that’s been going on in the world I haven’t been able to bake as much. Things are lifting so I took the opportunity to bake for my neighbors and friends. One of the favs around here are my Cheesecake Stuffed Chocolate Chip Cookies. They are a little time consuming as there are multiple steps, but very much worth it. I mean, you get cheesecake, and a chocolate chip cookie all in one, what’s not to love?

5 ingredient Peppermint Patties

For this last Monday night dinner, we did a Thanksgiving theme for the food. We have been doing a lot of cakes and pies, so we wanted something a little different, but still keeping with the holidays. So, I decided to make homemade peppermint patties. Only 5 ingredients, take a little time but easy. I love cooking and baking, and the recipes I love the most are the easiest.

Edible Cookie Dough

Cookie dough is always a crowd favorite, but so many are scared to eat it raw due to the flour and raw eggs. This edible cookie dough takes out the eggs and bakes the flour, making it safe to eat “raw”.



Cookie dough base:

  • 1 cup butter, softened
  • 1 cup brown sugar 
  • 2 tablespoons milk
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 2 cups flour

Topping suggestions:

  • Mini chocolate chips
  • Mini m&m’s
  • Gummy bears
  • Peanut butter chips

Instructions:

  1. Preheat oven to 350
  2. Place the flour on a cookie sheet and spread evenly. Bake for 5 minutes (this takes out any bacteria)
  3. In a bowl, sugar, milk, vanilla salt, butter and the baked flour. Mix until all combined evenly
  4. Place in the refrigerator for 30 mins
  5. Once chilled, separate into 4-6 even portions
  6. Add toppings to each portion and mix until evenly combined

Chocolate Mint Cookie Trifle

Trying to come up with fun holiday snacks for kids can be daunting and I know I don’t often have all the ingredients on hand. I was thinking of something for my kids (ok and me). I looked at what I had and saw Mint Oreo’s, Thin Mints, and pudding snack cups. Figured I would put it all together and make a Chocolate Mint Cookie Trifle.



Ingredients (serves 4)
4 pack of pudding snack cups
12 OREO Cool Mint Cookies, chopped
whipped cream
1½ teaspoons pure mint extract
green food coloring
12 Thin Mint cookies (8 for chopping)
Chop the Oreo's up into small pieces (roughly 3 per serving). Then place in the bottom of the container.
Place pudding on top of the Oreo’s
Chop thin mints up (roughly 2 per serving) and put on top of the pudding.
Mix mint extract and green food coloring into the whipped cream.
Add a spoonful on top of the Thin Mints
Place a thin mint as a garnish in the whipped cream

Fresh From Florida Blueberry Cheesecake Pie Recipe

Living in Florida can be pretty awesome, and enjoying the foods fresh from Florida is awesome as well. The weather here is so that we can enjoy the yummiest fruits and vegetables all winter long and one of my families favorites is blueberries! My daughter eats blueberries all day long, and I love cooking with them and making blueberry cobblers and pies. There are so many other items I love eating during this season like awesomely colorful and flavorful bell peppers. They are amazing raw with a little ranch, or even sauteed as a dinner side. I live in a little town that is known for their peanuts, so of course we indulge in peanuts quite frequently. I love eating boiled peanuts, fresh peanut butter made right here in my town, and even peanut brittle. Of course, Florida is known for its amazing oranges too, so they are certainly a staple in our home year round, but most especially during the winter months. I do not think you can be a true Floridian and not enjoy a good orange frequently! Eating Fresh From Florida means my family is enjoying healthier, fresher foods on a regular basis, and also enjoying foods that that are filled with flavor because they are not shipped cross country before hitting our doorsteps.

Apple Pie Bread Pudding

Who doesn’t like apple pie right? Add some bread pudding and ice cream and you have an amazing dessert. Now you can do this a few different ways of course.

I have learned that every recipe can be altered to what you have on hand. When I made it I didn’t have any fresh apples, or regular bread. So, I improvised and used hot dog buns and apple pie filling. Still turned out amazing. So, this is how I made it. You may want to alter it as well to your way, fresh apples, brown sugar etc.



Ingredients:

6 pieces of bread (I had hot dog buns on hand)
3 eggs
1/2cup of milk
1 tablespoon cinnamon
1 teaspoon vanilla
2 cans apple pie filling
Ice Cream
Caramel sauce

Directions:

  1. Preheat oven to 350
  2. Cut the bread up into small cubes
  3. In a bowl, mix the eggs, cinnamon, milk and vanilla
  4. Add the bread to the mixture and mix until the liquid is all soaked into the bread
  5. Add the bread into a banking pan- 9 inch, something large enough so the bread isn’t too thick, but not to large that it’s too spread apart.
  6. Spread the apples over the top (I add a little extra cinnamon to the apples)
  7. Bake for 40 minutes or until the ends are golden brown
  8. Let it cool for a few mins, top with ice cream and drizzle with the caramel sauce.

Easy Oreo Truffles

I love chocolate, and Oreos, so I figured I would combine that and make some Oreo Truffles! These are so easy to make that they only require 3 ingredients!! The worst part is waiting for the chocolate to chill before you can eat them. So, if you have a spare partial morning, I would make these. No need to wait for a dinner party or something at work.


Ingredients:

  • Family size package of Oreos
  • 8 oz package of cream cheese
  • 16 oz of semi-sweet chocolate chips

Directions:

  1. Put all the Oreos into food processor or blender and pulse until very fine.
  2. Take out, about ½-3/4 cup of the Oreos and set aside
  3. Add the cream cheese to the blender and continue to pulse until mix well
  4. Scoop out mixture and form into small balls (I use a small ice cream scooper). Makes around 41 depending on how big you make them.
  5. Melt chocolate over a double boiler
  6. Coat the Oreo balls into the chocolate and place on parchment paper
  7. Sprinkle the Oreo crumbs that you set aside on top of the coated balls
  8. Let cool in fridge for about an hour

Indoor S’more Pizzas

My oldest daughter recently had a sleep over and wanted a special treat. Personally, I was really craving S’mores, but didn’t want to build a fire and do all that work. So, I decided I would make a different version- Indoor S’more Pizzas.
