Chocolate Mint Cookie Trifle

Trying to come up with fun holiday snacks for kids can be daunting and I know I don’t often have all the ingredients on hand. I was thinking of something for my kids (ok and me). I looked at what I had and saw Mint Oreo’s, Thin Mints, and pudding snack cups. Figured I would put it all together and make a Chocolate Mint Cookie Trifle.



Ingredients (serves 4)
4 pack of pudding snack cups
12 OREO Cool Mint Cookies, chopped
whipped cream
1½ teaspoons pure mint extract
green food coloring
12 Thin Mint cookies (8 for chopping)
Chop the Oreo's up into small pieces (roughly 3 per serving). Then place in the bottom of the container.
Place pudding on top of the Oreo’s
Chop thin mints up (roughly 2 per serving) and put on top of the pudding.
Mix mint extract and green food coloring into the whipped cream.
Add a spoonful on top of the Thin Mints
Place a thin mint as a garnish in the whipped cream

Enjoy

  21. Oh my gosh, this looks so good. I love mint and love thin mint cookies. I think this would be an easy dessert to make, in fact, I think I am going to make it for my mom for dessert on Mother's day because she too loves thin mint cookies and chocolate pudding!! Thanks for sharing this recipe.
