Chorizo Pork Balls






Ingredients

9oz Chorizo
1 lb. lean ground pork
1 tbsp. chili powder
1 tsp. crushed oregano
½  clove minced garlic
½ tbsp. paprika
¼  tsp. ground cumin
½  tsp. salt
½  tsp. pepper
shredded goat cheese (optional)
box baking cups (I use PaperChef)
muffin tin


Directions


  1. Preheat oven to 200
  2. Place cups into the muffin tin
  3. Combine chorizo, pork, chili powder, oregano, garlic, paprika, cumin, salt and pepper in a mixing bowl. Work mixture with your hands until everything is well distributed with the meat and seasonings
  4. Form meat into balls and place into the baking cups
  5. Cook 40-50 minutes or until done (you can use a meat thermometer and make sure it reads 165
  6. sprinkle some cheese and cook again for about 3-5 minutes until cheese is melted
  7. let cool for just a few mins and place cups onto a serving plate
