Ingredients
9oz Chorizo
1 lb. lean ground pork
1 tbsp. chili powder
1 tsp. crushed oregano
½ clove minced garlic
½ tbsp. paprika
¼ tsp. ground cumin
½ tsp. salt
½ tsp. pepper
shredded goat cheese (optional)
box baking cups (I use PaperChef)
muffin tin
Directions
- Preheat oven to 200
- Place cups into the muffin tin
- Combine chorizo, pork, chili powder, oregano, garlic, paprika, cumin, salt and pepper in a mixing bowl. Work mixture with your hands until everything is well distributed with the meat and seasonings
- Form meat into balls and place into the baking cups
- Cook 40-50 minutes or until done (you can use a meat thermometer and make sure it reads 165
- sprinkle some cheese and cook again for about 3-5 minutes until cheese is melted
- let cool for just a few mins and place cups onto a serving plate
