Gift in a Jar Week One "Friendship Soup Mix"


Some of you showed interest in me sharing some "Gift in a jar recipes" I always thought that the jar gifts are a wonderful, inexpensive way to give a thoughtful gift!!

"Friendship Soup Mix"
1/3 cup of bouillon granules
1 tablespoon of freshly ground black pepper
1/4 cup of minced onion
1/2 cup green or yellow dried split peas
1/4 cup of wild rice
1/3 cup of long grain white rice
1/2 cup of red or brown lentils
1/2 cup of elbow macaroni
1 cup of tricolor corkscrew pasta (or enough to fill jar)


Layer Ingredients in order given in wide mouth jar with tight lid. Pack each layer firmly. Seal Jar.

How to cook the soup:
You need these additional items:
The Soup Mix
6 Cups of Vegetable stock
6 cups of water
1/2 to 1 lb of ground beef or turkey, browned and drained (optional)

-Remove Pasta from Jar
-Pour Stock and water into a 5 or 6 quart saucepan. Bring to a boil over high heat, stirring occasionally. Add remaining contents of jar, return to a boil. Reduce heat to simmer. Cover, simmer for 20 to 30 minutes or until rice, lentils and peas are tender.
-Add colored pasta and meat (if desired) to soup. Return to a boil, stirring occasionally. Reduce Heat to simmer. Cover, simmer 10 to 15 minutes longer until pasta is done. Refridgerate leftovers.

  2. This sounds really good... I love lentils mixed with ground meat and rice. I'm not a fan of peas, so I'd leave those out. :-)
    Thanks for starting these recipes, I cannot wait to give some of these as gifts.
