I was given the honor of participating in a product kick off
hosted by Del Monte. They are also doing a HUGE Pinterest Sweepstakes with this
launch. I was sent 1 can of Del Monte Petite Cut diced tomatoes with Green
Chilies and a 1 can of Del Monte Petite Cut Diced Tomatoes with Chipotle
Chilies. I was asked to make a recipe using those ingredients. I was also given
a $25 gift card to help purchase additional items to make my dish.
When I told my husband what I had to do, he got super excited
and asked that I make a dish called Texas Caviar. I had never heard of it, and
I was game. The recipe is posted below.
First off, I thought the green chilies and the chipotle
chilies were going to be really spicy and hot, but they are not. They have a
really nice zesty/tangy taste to them. There are different variations to the recipe,
some just calling for diced tomatoes. I’m really glad I used Del Monte’s as they
really made the Texas Caviar come to life.
This is just one recipe that would be perfect with the green
chilies and the chipotle chilies, but there are so many more. I know another
one would be quesadillas. We love Mexican food in my house, and I know we will
be buying some and making quesadillas soon.
The new Del Monte Southwestern-Style Petite Cut Diced
Tomatoes are the perfect way to spice up main dishes and snacking recipes.
Del Monte canned tomatoes, fruits and vegetables contain the
same essential nutrients as fresh varieties.

ripeness and canned on the same day, to ensure nutrients and flavor are locked

Texas Caviar:
INGREDIENTS
4 cups of cooked black-eyed peas (2 15-ounce cans, rinsed
and drained)
8 green onions, just the green parts thinly sliced
1/2 cup chopped cilantro
1 can of Del Monte Petite Cut diced tomatoes with Green
Chilies
1 can of Del Monte Petite Cut Diced Tomatoes with Chipotle
Chilies.
1 yellow bell pepper, seeds and stem removed, diced
3 cloves garlic, minced
2 Tbsp olive oil
2 Tbsp lime juice
1 teaspoon ground cumin
Salt and black pepper, to taste
METHOD
1 In a medium bowl, stir together the black-eyed peas, green
onion greens, cilantro, Green Chilies, Chipotle Chilies bell pepper, and garlic.
2 In a separate bowl, whisk together the olive oil, lime
juice, and cumin. Pour over the black-eyed pea mixture. Stir to coat. Add salt
and pepper to taste.
Best chilled for several hours. Serve cold as a side salad or
with tortilla chips.
