Arroz con Leche- Cuban Rice Pudding

I don’t bake a lot, I usually end up buying desserts or sweets at the store. It’s a running joke in my house that I only cook Mexican/Cuban dishes well. With the help of Minute® Ready to Serve Rice I made my family Arroz con Leche (Cuban Rice Pudding).





By using Minute® Ready to Serve Rice , it saved about 20 minutes of cook time. Not only that, but made it a lot easier to make as well. I didn’t have to wait for the water to boil and the rice to cook. All I had to do was pop the containers in the microwave for 60 seconds and that part was done.


To say my husband liked this is a complete understatement. He said by far this was the best dessert I have ever made. I love that I can make this with staples that I keep in my pantry/fridge. You can eat it cold or hot, so throwing it together at night and putting it in a to go container for lunch the next day makes it perfection.


One of the things I love about Minute® Ready to Serve Rice is the cups are already portioned out for you and two cups come in a container. There is no guessing involved. If you get their Whole Grain Brown Rice you can add a little granola, and peanut butter and make it a great afternoon snack for the kids or even a pick me up during that 3pm sleepy hour (I know i’m not the only one).

Arroz Con Leche- Cuban Rice Pudding




Ingredients
  • 1.5 containers of Minute® Ready to Serve Rice
  • 1 teaspoon vanilla
  • 1 cinnamon stick
  • 4.5 cups milk
  • 1 cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon




Directions


  • take tops off the Minute® Ready to Serve Rice containers and cook in microwave for 1 minute
  • in a pot add rice, milk, salt and sugar
  • cook over medium heat, and stir every 10 mins or so (prevent from burning) for about an hour until it thickens
  • take out cinnamon sticks and put in container or dessert cups
  • sprinkle ground cinnamon over
  • serve warm or chilled

    1. if you try in a crock pot make sure to have on low so it doesn't burn. I learned the hard way of not stiring often enough. it was bad, really bad.

  7. That sounds like my kind of cooking.If O tried to cook regular rice it would be a big clump of starch. This recipe sounds good. I like rice pudding.
