Loaded Potato Soup

After eating out and having potato soup I decided that I really wanted to make some myself (I have never done it). My family loves it and a few of our friends that made sure we brought them some too. I figured I had to share!

Loaded Potato Soup





Ingredients:

4 cups of potatoes, peeled and chopped (about 3 medium potatoes)
1/4 cup of flour
1/2 Tbsp. of salt
1/2 Tbsp. of pepper
1 1/2 cups of heavy cream
3/4 cup of onions (about ½ a white onion)
Chopped scallions
4 cups of chicken broth
Shredded cheese
4 Tbsp. of butter
1/4 cup of sour cream
Bacon




Directions:

Peel and chop potatoes into bite size pieces.
Add the potatoes, chicken broth, Chopped onions, salt and pepper to the slow cooker.
Set it to low for 6 hours or high for 4 hours.

I cook up some bacon and let cool at some point during the 4-6 hour wait, or you can use bacon bits or just buy bacon pieces already cooked.

Once there is about 20 mins left then:

In a saucepan, combine the butter, heavy cream, flour and sour cream. Whisk until thick. When the slow cooker is done, pour in the. Stir it all in, then cover and set the slow cooker to low for another 30 minutes.

Chop up the scallions

Serve with shredded cheese, bacon and chopped scallions. Enjoy!

  25. Homemade potato soup is one of my most favorite soups. My mother made it when I was a kid and now I make it. I have to watch my starch and carb intake, so I dont make it as often as I would like, but I do enjoy it when I make it.
