My mom was always telling us kids we needed food that stuck to our ribs. This recipe is definitely one of those meals. In the voice of Joey from Friends: Chicken- good, bacon- good, potatoes- good. Add a few other ingredients, throw in the oven and it’s even better. My family enjoyed it, I hope yours does too.
Ingredients:
1 lb. boneless chicken breast, cubed
½ lb bacon, diced
8 medium red potatoes, diced ½”
1/4 Cup olive oil
1-½ tsp. ground black pepper
1 tbs. paprika
2 tbs. garlic powder
2 Cup Cheddar cheese blend, shredded
½ Cup green onion, chopped
Directions:
preheat the oven to 400 degrees
Cut both the potatoes and chicken into small cubes.
In a large bowl combine the salt, pepper, paprika, garlic powder, olive oil. Mix well.
Add the potatoes and chicken and mix until evenly coated.
Place chicken and potatoes into 9x13 baking pan for 45-55 minutes.
While the dish is in the oven, fry up the bacon and chop into pieces
chop up green onions. You can do this to taste or about 1/2-3/4 cup.
When the potatoes are done take the dish out, top with the shredded cheese, bacon and green onions. Place back in the oven for about 5 more minutes until the cheese is melted.
Serve and enjoy! If you want to you can always add sour cream or even a little more chopped green onion.
