Fresh From Florida Blueberry Cheesecake Pie Recipe

Living in Florida can be pretty awesome, and enjoying the foods fresh from Florida is awesome as well. The weather here is so that we can enjoy the yummiest fruits and vegetables all winter long and one of my families favorites is blueberries! My daughter eats blueberries all day long, and I love cooking with them and making blueberry cobblers and pies. There are so many other items I love eating during this season like awesomely colorful and flavorful bell peppers. They are amazing raw with a little ranch, or even sauteed as a dinner side. I live in a little town that is known for their peanuts, so of course we indulge in peanuts quite frequently. I love eating boiled peanuts, fresh peanut butter made right here in my town, and even peanut brittle. Of course, Florida is known for its amazing oranges too, so they are certainly a staple in our home year round, but most especially during the winter months. I do not think you can be a true Floridian and not enjoy a good orange frequently! Eating Fresh From Florida means my family is enjoying healthier, fresher foods on a regular basis, and also enjoying foods that that are filled with flavor because they are not shipped cross country before hitting our doorsteps.



I wanted to share one of my favorite recipes with you, Homemade Blueberry Cheesecake Pie.
What you will need to complete this recipe is: 
  • A premade pie crust
  • 1 tsp vanilla
  • 1 cup of sour cream
  • 2/3 cup of sugar
  • 8oz package of cream cheese
  • 2 large eggs
for the Florida Fresh Blueberry Topping:
  • 1 1/2 cups of Fresh From Florida kblueberries
  • 1/4 cup of sugar
  • 1/8 cup of water
  • 1 tablespoons of lemon juice
Preheat your oven to 375 degrees.  
Mix cream cheese, sour cream, eggs, sugar and vanilla until smooth and pour into pie crust. Bake for about 30 minutes or until the pie filling is slightly jiggly in the center but pretty firm otherwise. Let it cool on the counter for one hour before adding the Fresh From Florida blueberry topping. 


While your cheesecake is cooling, mix sugar, cornstarch, water and lemon juice and stir together until it is smooth. Stir in 1 cup of blueberries for a minute or two until most of them have popped and the sauce has thickened. Then stir in the rest of your blueberries and pour the mixture over your cheesecake. You will need to refrigerate this for 3-4 hours at minimum (preferably overnight) and then enjoy!
