Peppered Fajita Chicken and Brown Rice- #FreshFromFlorida

 Living in Florida can be pretty awesome, and enjoying the foods fresh from Florida is awesome as well. The weather here is so that we can enjoy the yummiest fruits and vegetables all winter long and one of my husbands favorites is bell peppers, and most especially the red and yellow ones. I cook with them often since he loves them so much, and whipped up this super easy, and delicious meal today for him. It is like chicken fajitas, but without the wraps because we are both dieting. Instead I added a small serving of brown rice in each foil pack to give us a little starch. 

Ingredients: 
  • 4 Thinly sliced Chicken Breast
  • Low Fat Shredded Cheese
  • 2 Bell Peppers- whichever colors you prefer
  • Fajita flavor packet
  • 1/2 cup of brown rice (uncooked) 
  • 1 1/2 cup of hot water
  • salsa    
  • non-stick spray
  • aluminum foil
Preheat oven to 400F This recipe would probably be better with heavy duty foil, but since I did not have any I doubled up. Fold the foil into a box shape and then spray the bottom with your nonstick spray. Mix the hot water and rice together and add in a small amount of salsa to flavor the rice. Pour 1/4 of your mixture on the bottom of the pouch and then top with your chicken breast. Add your peppers on top, and sprinkle the fajita flavoring on top of the entire packet. Top with a little more salsa. Fold the entire aluminum foil together and place into the oven for 30-40 minutes depending on the thickness of your chicken. When it comes out of the oven, vent it and then top everything with cheese, and close the foil pouch back so the cheese melts. After a few minutes, scoop out and enjoy!

This is a very easy and delicious dinner that can be prepared in advance and kept in the fridge until you get home from work, and you can just pop it in the oven! My husband and I both enjoyed it very much and the peppers are what truly makes the meal!

  3. What a great idea! You could even cut the chicken into strips and put it and the veggies and cheese right on a tortilla shell and have an actual fajita. I've been looking for some new packet recipes. I'd like to try cooking these out on my grill, too.
