Now I’m sure when you or your little ones get sick they want something besides medicine to help them feel better. My oldest is vegan so I make a vegetable soup (even my 5 year old LOVES it). It’s super easy to make and with Safeway’s O Organics® line, it’s very affordable.
What’s great about this recipe is that you can use frozen veggies, or fresh as well. O Organics has a great selection in the product dept. You can also use whatever veggies you like. If the recipe I have below has something you don’t like, simply don’t include it and or swap it out for something else.
Ingredients:
- 2 boxes of O Organics vegetable broth
- 4 Bouillon cubes
- 2 big tablespoons of Herbes de Provence- Secret ingredient (no, not secret anymore)
- O Organics 20 oz. of tomato herb pasta sauce
- Cherry tomatoes (optional)
- O Organics carrots
- O Organics Celery, chop up as much as you want
- 2 boxes of vegetable broth - liquid
- O Organics Potatoes
- ½ medium onion
- Cauliflower
- Bag of frozen broccoli
- Bag of frozen green beans
- 1- 2 cans of black beans or kidney beans or both
- Salt & Pepper
Directions:
- In a big pot add broth, bouillon cubes, pasta sauce, Herbes de Provence and bring to a simmer
- While it simmers, cut up the raw veggies, and add to the pot
- Once raw veggies are softened start adding the bags of frozen veggies along with the black/kidney beans.
- A whole can or 2 of black beans or kidney beans or both
- Bring to a medium heat and cook about 20-30 minutes.
- Add salt and pepper to taste.
ENJOY
Like I said, all vegetables you can swap out for others if you want. This is a great soup that can be made for just about anyone’s taste. Safeway had everything I needed for my big pot of soup.

ReplyDeleteI didn't know safeway had all those grocery products! I remember going to safeway when I visited Seattle but I rarely see it in Texas! Also, soup is perfect for cold weathers.

ReplyDeleteWe have colds right now. Matter of fact we had vegetable soup tonight, and hubby is drinking warm apple juice. I am sticking to a peppermint tea!
