Chocolate Covered Peanut Butter Sandwich Cookies

I love chocolate, who doesn’t right? I think I’ve met like under 10 people in my life that don’t, and 2 are in my family. So when you take staples like peanut butter and marry them with chocolate you get perfection. I wanted to make something just a step up from that, but keeping it simple at the same time. So, I give you Chocolate covered peanut butter sandwich cookies! Since it’s the holidays, I threw on some holiday sprinkles. Let’s be real, you can make these anytime of year, and throw on some pastel sprinkles to make them Easter, Orange and brown to make them Halloween etc.





These take a little time, but only because of the steps not the difficulty. As an added bonus, you only need 4 ingredients (well, 5 if you do sprinkles). You all know I love me a good few ingredient dessert.








Ingredients:
Ritz crackers- around 100 (buy the family size box and you will have plenty)
1 cup marshmallow fluff
1 cup creamy peanut butter
2 pounds melting chocolate (Ghirardelli melting wafers are my favorite). you can do white chocolate as well, or both! 
Sprinkles (whatever kind you want)- optional

Directions:
  1. Line a baking sheet with parchment paper.
  2. Lay half the crackers down on the sheet with the flat part up (think of making a sandwich)
  3. In a bowl, mix the marshmallow fluff and peanut butter until is well combined and looks like a spread.
  4. Spread a small amount of mixture onto each cracker. Don’t put too much or coating it will be hard. Use your judgement on how much you want. I like to picture I’m spreading some cheese on a cracker.
  5. Place the other crackers on top of the mixture to make the sandwich
  6. Melt the chocolate in a bowl. I do 1 pound of chocolate at a time, that way it stays nice and doesn’t cool down too much and is easier to work with.
  7. Dip each sandwich into the chocolate, completely coating the sandwich
  8. Place back on the parchment paper, add sprinkles before it sets. I do 3 or 4 at a time and then add sprinkles to those.
  9. Store in an airtight container
  10. Enjoy

  4. Those look amazing! Me & my daughter will have to give them a try while my son sits this one out. He is allergic to peanut butter so more for us! LOL
