With all that’s been going on in the world I haven’t been able to bake as much. Things are lifting so I took the opportunity to bake for my neighbors and friends. One of the favs around here are my Cheesecake Stuffed Chocolate Chip Cookies. They are a little time consuming as there are multiple steps, but very much worth it. I mean, you get cheesecake, and a chocolate chip cookie all in one, what’s not to love?
Cookie Ingredients
2 ½ sticks butter- softened
1 cup brown sugar- packed
½ cup sugar
2 tsp pure vanilla extract
2 large eggs
2 ¾ cup flour
1 tsp baking soda
¾ tsp salt
2 cup semi sweet chocolate chips
Cheesecake filling
12 oz cream cheese- softened
½ cup powered sugar
Pinch of salt
Cookie directions
Using stand mixer with a paddle attachment beat the butter and the sugars until light and fluffy. Then mix in the vanilla and eggs.
In a separate bowl sift the flour, baking soda and salt.
Add flour mixture to the butter slowly until mixed evenly.
Take the beater out and fold in the chocolate chips.
Cover and place in fridge for 30 mins.
Cheesecake filling
Combine cream cheese, powdered sugar and salt and mix together until smooth.
Cover and place in fridge for 30 mins.
Assembly
Get a one tablespoon scooper. Scoop 2 balls. And then flatten them. Scoop a little bit of filling and place in the middle of one cookie. Place the other on top. Pinch the sides and then roll into a ball. Repeat 8 more times or depending on your baking pan.
Bake at 375 for 12-15 mins, place on a cooling rack.
