Fruit Salsa with Cinnamon & Sugar Chips

I had my birthday party and of course it was full of amazing foods. I wanted something healthy to round out the chocolate and pizza, so I decided to make a fruit salsa and Cinnamon and Sugar Chips to go along with. Let me just say, it’s amazing. If you love fruit, you will love this.





Fruit Salsa ingredients:
  • 1 lemon
  • 6 granny smith or Honeycrisp apples
  • 3lbs strawberries
  • 1.5 lbs raspberries
  • 3 cups kiwi
  • 12 TBSP raspberry jam


Directions

  1. Finely chop strawberries, and kiwi.
  2. Peel and finely chop apples, squeeze lemon juice over the apples (so they don’t brown), and add to other fruit.
  3. Combine all ingredients and gently stir until jam is incorporated in. Note, the raspberries will break apart a bit.



Cinnamon and Sugar Chip Ingredients:


  • 20 flour tortillas
  • Cooking spray
  • 1 cup sugar
  • 3 tsp cinnamon


Directions


  1. Preheat oven to 350 degrees
  2. Spray 3 tortillas with cooking spray
  3. Cut into wedges
  4. combine cinn & sugar and put in bag or bucket (I put in a bag or bucket and shake). You an also just sprinkle the cinn & sugar mix on each side if you want.
  5. Place on baking sheet and bake 8-11 mins until crisp.
