I had my birthday party and of course it was full of
amazing foods. I wanted something healthy to round out the chocolate and pizza,
so I decided to make a fruit salsa and Cinnamon and Sugar Chips to go along
with. Let me just say, it’s amazing. If you love fruit, you will love this.
Fruit Salsa ingredients:
- 1 lemon
- 6 granny smith or Honeycrisp apples
- 3lbs strawberries
- 1.5 lbs raspberries
- 3 cups kiwi
- 12 TBSP raspberry jam
Directions
- Finely chop strawberries, and kiwi.
- Peel and finely chop apples, squeeze lemon juice over the apples (so they don’t brown), and add to other fruit.
- Combine all ingredients and gently stir until jam is incorporated in. Note, the raspberries will break apart a bit.
Cinnamon
and Sugar Chip Ingredients:
- 20 flour tortillas
- Cooking spray
- 1 cup sugar
- 3 tsp cinnamon
Directions
- Preheat oven to 350 degrees
- Spray 3 tortillas with cooking spray
- Cut into wedges
- combine cinn & sugar and put in bag or bucket (I put in a bag or bucket and shake). You an also just sprinkle the cinn & sugar mix on each side if you want.
- Place on baking sheet and bake 8-11 mins until crisp.
