The gift that keeps on giving, Power Quick Pot

Pressure cookers have been around for years, but mainly in professional kitchens. That was until a few years ago when they became more mainstream. While they can be intimidating at first, they can be a huge asset to your kitchen. I was recently sent a Power QuickPot to test out. I seriously love kitchen appliances and have a lot, but a pressure cooker is one that I use a lot so trying out a new brand is right up my ally.

What functions does the Power QuickPot have?
  • Pressure cooker
  • Slow cooker
  • Sous Vide
  • Stovetop
  • Rice cooker
  • Steamer
  • Canner
  • Yogurt maker

I wanted to share with you 2 must have recipes. The first is one of my family’s favorites: Loaded Potato Soup. The downside of the soup being made in a slow cooker, is that it takes 6 hours. So it’s not a last min dinner idea type of thing. However, when made in the Power QuickPot, I was able to get the cook time to about 25 minutes, and if you want your potatoes a little firmer do a few mins less. 23 minutes is so much easier to handle than 6 hours, which also means my family gets to eat it more often this way. The other recipe is a very simple apple crumble. A few simple steps and a cook time under 8 minutes and you have a desert everyone will love.

Loaded Potato Soup

  • 4 cups of potatoes, peeled and chopped (about 3-4 medium potatoes)
  • 1/4 cup of flour
  • 1/2 Tbsp. of salt
  • 1/2 Tbsp. of pepper
  • 1 1/2 cups of heavy cream
  • 3/4 cup of onions (about ½ a white onion)
  • Chopped scallions
  • 4 cups of chicken broth
  • 2 cups Shredded cheese
  • 4 Tbsp. of butter
  • 1/4 cup of sour cream
  • Bacon

Directions
  1. Peel and chop potatoes into bite size pieces then dice the onions.
  2. Put the onions, potatoes and chicken broth into the Power QuickPot. Set to high pressure for 20 minutes, then release. Wait until all the steam is out before opening the pot.
  3. While it’s pressure cooking you can make the sauce and cook the bacon. Once the bacon is cooked chop into small pieces.
  4. In a saucepan melt the butter then heavy cream, flour and sour cream and whisk until thick.
  5. Once the steam release open the lid, turn on saute and add the sauce along with the salt and pepper and 2 cups shredded cheese. Stir and let cook for 3-5 minutes.
  6. Once done place in a bowl and garnish with chopped scallions, more shredded cheese if you like and the bacon.

Apple Crumble

 Ingredients:

  • 5 medium sized apples, peeled and chopped into chunks
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp maple syrup
  • 4 tbsp butter
  • 3/4 cup old fashioned rolled oats
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/2 tsp salt

     Directions

  1. Cut apples into bite size pieces and place in small round cake pan (comes with the Power QuickPot)
  2. Add cinnamon and nutmeg (you can stir them a little so it coats a little better) Then top with maple syrup.
  3. In a separate bowl melt butter and then add the flour, oats, brown sugar and salt. Mix well. Add to the top of the apples. I add just a sprinkle of cinnamon on top of the oats, but you don’t have to.
  4. Place the metal stand in the QuickPot and add enough water that it’s about half way up. Then place the pan on top of the stand.
  5. Secure the lid and cook on high pressure for 6-8 minutes (depending on how you like the apples).
  6. Use a natural release and wait for all the steam to come out. Let sit for a few mintues before serving.
  7. As an added bonus you can serve with some vanilla ice cream topped with a little caramel.

The Power QuickPot comes in a few different sizes, 6, 8 or 10 quarts so you can pick which meets your needs the best. I haven’t tried the Sous Vide function yet but I’m super excited to as ive been wanting to get one for a long time. I’m sure it will turn out perfect and saving me the money from having to get a separate appliance.
