Pumpkin Bars

It’s crazy to me that Thanksgiving is just around the corner. I always have my staples that I make around the holidays, and then I like to throw in a few newer ones as well. I was going through some old family recipes and came across pumpkin bars. Tis the season, and my family loves everything pumpkin, I knew I had to make it and share with you. Please check out the recipe below. 





Bar Ingredients

4 eggs

1 cup olive oil

2 cups sugar

1 can pureed pumpkin (2 cups)

2 cups flour

2 teaspoons baking powder

1 teaspoon baking soda

Pinch of salt

2 teaspoons cinnamon 

1/2 teaspoons ginger

½ teaspoon cloves

½ teaspoon nutmeg


Frosting ingredients

¾ stick butter (6 tablespoons) 

6 oz softened cream cheese

2 cups powdered sugar

2 teaspoons vanilla


Directions


Bars 

Preheat oven to 350

Take out cream cheese and butter, set aside and let sit to soften

Mix eggs, oil, sugar and pumpkin in a bowl 

In a large mixing bowl add all dry ingredients and add to the wet ingredients and mix together

Pour into a large cookie sheet and bake for 23-30 mins 

Let chill completely before putting frosting on


Frosting

Make sure the cream cheese and butter are nice and soft. 

Cream the cream cheese and butter together and mis in vanilla

Sift powdered sugar, and to the mixture and mix until smooth

Spread over chilled bars

Chill again to let frosting set a little and cut. 

You can sprinkle a little nutmeg on top if you want.
